Carrot Ginger Dressing

SIBO Friendly & Low FODMAP

Often during the height of inflammation with SIBO people experience many food sensitivities. Soy sauce is one of them as soy is highly processed and genetically modified. Soy has always been a food that I’ve been sensitive to but absolutely love Asian inspired meals! I created this recipe which still has the same amazing traditional carrot ginger dressing taste without the soy sauce…and a bit more creaminess with the sunflower seed butter!

I’ve also included an alternative to the sesame oil in case that one’s an issue for you as well!

SIBO Supportive Meal: Carrots are one of the easiest starchy vegetables to digest due to their low FODMAP content (they’re a great alternative in many squash or sweet potato recipes because of this!) which makes this an easy to digest dressing!

The ginger is also a great prokinetic, which helps to promote movement of your small intestine that may be slowed by the overgrowth of bacteria.

Ingredients:

  • 3 tbsp of sesame or olive oil

  • 1/2 tbsp avocado oil

  • 3 tbsp of rice vinegar (or apple cider vinegar)

  • 3 chives

  • 1/4 cup of water

  • 1/2 of roasted carrots

  • 1 tbsp of sunflower seed butter

  • 1 knob of fresh grated ginger

  • 1 1/2 tsp of salt & pepper

Directions:

  1. Preheat the oven to 375F.

  2. Wash and chop the carrots into small pieces. Spread the pieces on a glass baking dish and coat with 1/2 tbsp of avocado oil and 1/2 tsp of salt and pepper. Bake for approximately 20 min or until carrots are tender.

  3. Peel the ginger and grate and add it to your mixer.

  4. Once the carrots are done, add all the ingredients into a mixer. Blend on high until smooth. Use this as a sauce for any salad or bowl. Enjoy!

Food Prep Tip: Refrigerate in an air tight container for up to 4 days.
